Hi Damien,
The font style and size for all (3D) labels collectively can be set in the Preferences (under Favorites in the menu), category: Background.

Although you can move atom/residue labels with mouse Ctrl-right drag, that doesn't work for bond/pseudobond labels like the distance value.
If this is for a figure, consider first setting up the view and then using 2D Labels (under Tools... Utilities) instead of 3D labels. This tool allows creating/moving labels, including symbols like Angstrom symbol, Greek letters, and arrows, anywhere in the 2D plane, and they can be in all different sizes and colors. These are not associated with specific atoms and bonds and do not move along with the structure.
