Hi Ryan,
That actually changes the grid spacing, which is part of the information in a volume data file, so yes it would be saved.  I tested it just now with MRC format, but I believe other formats also include voxel size information.

Not hard to test:
You can see the voxel size by using Volume Viewer menu: Features… Coordinates.  So if you open a map, you can see its original value, then change the value, then save to file.  Upon reopening the copy that you saved, you can see it has the new value that you changed it to.
